- 2 kg shrimp (cleaned & deveined)
- half a cup of pineapple juice
- 1 teaspoon of salt
- 2 tablespoons of lemon juice
- 1 cup orange marmalade
- 1 teaspoon of ground black pepper
- 2 medium sized red onions
- pineapple rings
Method
In a saucepan combine pineapple juice, salt, lemon juice, marmalade and pepper. Let ingredients simmer for 10 minutes.
Pre-heat the grill to a medium heat. Thread the shrimp through skewers alternating with the onion and pineapple. Grill for 5 - 8 minutes until shrimp turns pink.
Serve with the sauce either by pouring it over or using it as a dip.

- 6 boneless, skinless chicken breasts
- 1 cup of coconut milk
- 2 tablespoons of brown sugar
- 2 teaspoons of cayenne pepper
- 1 teaspoon of salt
- 1 clove minced garlic
Method
Combine coconut milk, sugar, cayenne pepper, salt and garlic in a saucepan. Mix ingredients together and let simmer for 10 minutes.
Place chicken in a bowl and pour over the sauce. Place the bowl in the fridge and leave it for 1 to 2 hours to marinate.
Pre-heat grill to a medium heat and grill the chicken pieces for 4 - 6 minutes on each side.
Chicken should be cooked through and very very tasty! (yum,
yum!!)
- 1 banana (peeled)
- 3 scoops of vanilla ice cream
- 3 tablespoons of honey
- 2 tablespoons of chocolate syrup
- 1 tablespoon of whipped cream
Method
Slice the banana in half length wise. Coat the two banana pieces with honey.
Pre-heat grill to a low heat and place the banana pieces on. Grill for 3 - 5 minutes until bananas are caramelized.
Serve with ice cream, syrup and cream. A perfect summer recipe to get you grilling outdoors!! (yummy!)
