- chicken pieces
- half a cup lemon juice
- 1 pinched dry oregano
- salt for seasoning
- 2 teaspoons of thyme
- 4 cloves of chopped garlic
- 2 teaspoons of olive oil
Method
Start by placing your garlic in a mixing bowl and add the thyme. Place the chicken in a different mixing bowl and evenly pour with the garlic & thyme.
Pour the lemon juice over the chicken, making sure all the chicken pieces are covered.
Pour enough lemon juice into the bowl so that there is approximately half a centimeter of juice at the bottom of the mixing bowl. Add the oregano and olive oil.
Mix the chicken pieces around in the mixture to properly marinate. Add some salt for seasoning. Leave the chicken in the marinade for 20 minutes before barbecuing.
Keep the lemon juice handy as you will need to pour some on the chicken as you are barbecuing.

- half a tablespoon of paprika (hot)
- 1 onion
- 2 red chilli's de-seeded
- 1 tablespoon of your favourite pepper sauce
- 2 tablespoons of vinegar
- 1 red pepper & 1 Green pepper
- 1 tablespoon of olive oil
Method
This is one of my favourite BBQ Chicken recipes, start by finely chopping up the green & red peppers and placing into a mixing bowl. Chop the onion very finely and place into the mixing bowl with olive oil.
Add the pepper sauce then mix it together. Add the chicken and sprinkle over paprika. Pour vinegar and start turning the chicken pieces over to get them fully marinated.
Finally chop the chilli's very finely and sprinkle over the chicken. Place the mixing bowl in the fridge and leave over night to marinate.
While barbecuing the chicken be sure to pour over any left over marinade you might have left in the mixing bowl.
The great thing bout these BBQ chicken recipes is that they
add a protective barrier to the high heat of the grill. (yummy!!)

- quarter cup melted butter
- 2 tablespoons of lemon juice

Method
Place some olive oil in a mixing bowl and add the chicken pieces. Sprinkle over thyme with a dash of salt. Pour the lemon juice over the chicken but use sparingly.
Pour the butter over the chicken and sprinkle black pepper. Add some salt for seasoning and leave for about 30 minutes in the fridge before barbecuing.

This is my personal favourite grilling chicken recipe, i'm sure you will love it as much as I do!- For the marinade
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons dark brown sugar
- 2 tablespoon sherry
- 1 tablespoon sugar
- 4 to 6 skin-on filleted (boneless) chicken thighs for teriyaki sauce
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 tablespoons sherry
- 1 tablespoon sugar
- 2 tablespoons sake
Combine the marinade ingredients all together and mix the chicken thighs with the marinade and place in fridge for a couple of hours.
To make the teriyaki sauce, just add the honey, soy sauce, sherry, sugar and sake to a small sauce pan.
Cook until the sauce is glossy and slightly sticky or gloopy.
It should take on a caramelized taste but be careful not to burn it.
Remove the thighs out of the marinade and place on grill and cook, baste the chicken thighs with the teriyaki sauce until skin is nice and carmelized.
Give the chicken the final coat of teriyaki and serve, add some sesame seeds for the authentic look and extra flavour.
- 2 cups fresh mushrooms, sliced
- 1 cup beef stock
- 59ml Jack Daniel’s Whiskey
- 3 tablespoon butter
- 2 tablespoon flour
- 2 green onions, chopped
- 1 tablespoon fresh parsley, chopped
- 1 clove garlic
- 1 teaspoon Tabasco sauce
Preparation:Cook the garlic with a little olive oil
Make a white sauce using the butter and the flour and instead of milk use the chicken stock.
To make a white sauce, gently melt the butter, take the pan off the heat and add the flour until it becomes like a lump of flour and butter.
Place the pan back on the heat on low and slowly add the stock little by little to prevent lumps and you will see gradually the sauce thicken.
Saute the mushroom and the onion in a little bit of olive oil or butter until soft and tender.
Add Jack Daniels whiskey, Tabasco sauce to the thickened sauce.
Let it cook for a further 7 minutes on a low heat and Bbq your chicken until soft and tender, once the chicken is done place a little of the sauce on the side.
